I believe the animal in question is a Water Buffalo.

And to make a small correction, I didn't go on a safari (although I
wish, it would be an amazing photo op!) but we went to Parc Safari in
Hemmingford, Quebec. These big critters were just hanging out by, you
guessed it, the water, and having a nap.
